Carrots with orange and honey

These carrots are probably the best carrots you will ever have. They make a lovely accompainment or serve as your main meal with some salad leaves and shredded chicken.

Orange and honey works so well with carrots and the addition of sesame and pecans gives the dish a lovely nutty flavour.

Preheat an oven to 200 degrees Celius. Roughly chop carrots into large chunks and add to a roasting tray with 1 tablespoon olive oil, 1 tablespoon sesame seed oil and a sprinkling of sesame seeds. Toss and roast for 30 minutes, turning halfway through cooking.

Once the carrots have 10 minutes to go, add the zest and juice of a clementine, 1 tablespoon of honey and 1 handful of raisins, cook on a low heat.

To serve place the carrots in a serving dish, top with chopped pecans and drizzle on the raisins and dressing. Sprinkle some roughly chopped parsely on top.
