Parma ham and melon salad

This Parma ham and melon salad is another classic salad combination, and like my blood orange and fennel salad, I have mixed it up a little by serving it with this delicious “pesto” dressing. All the flavours of Italy on a plate!

This meal was inspired by a starter I had recently while in a Jamie’s Italian. It was slightly different in that there was some mozzarella but what I loved was that it was drizzled with pesto and it was the perfect thing to bring all the flavours together.

When I was making this for lunch I didn’t fancy, or have to hand, any homemade pesto so I opted for this “pesto” dressing. A lighter alternative, which has that delicious basil flavour but works a lot better as a dressing on salads.

To make this a little bit prettier I used a melon baller. I actually use a melon baller every time I eat melon now. I find it so much easier than slicing the melon and messing about with the skin.

      Thanks :) prosciutto is actually ham in Italian so technically you would say prosciutto di Parma, the Parma part being the cured ham specific to the region Parma in north Italy. It’s my personal favourite and the most common of the cured Italian meats :)
