Roasted asparagus

Springtime means asparagus time and while this may not count as much of a recipe, simply roasted with a little seasoning is my favourite way to enjoy this springtime vegetable.

Don’t you agree that asparagus is one of the most photographic of all the vegetables?

A little tip for preparing asparagus, rather than cutting the end off, gently bend until it snaps. Where it naturally snaps will be where the asparagus starts to become tender and hence perfect for eating.

Roasted asparagus

  1. 400 grams asparagus
  2. Sea salt
  3. Pepper
  4. Olive oil
  5. 1/2 lemon
  1. Place the assuages on a large sheet tray and drizzle with a little olive oil. Toss to combine then sprinkle with salt and freshly cracked pepper. Thinly slice a lemon and place over the asparagus.
  2. Put the tray in a fan oven preheated to 200 degrees delicious for 5-7 minutes. Turning occasionally. Serve immediately.
